This was a lovely little supper. Very healthy. In Tesco you get 2 fillets in a pack and there always seems to be a "2 pack for £7" or "3 for £10" on all meats. Suggest you get on it.
Rav made this the other day. It was superb! We had both never really had much contact with cauliflower but I can report it was fab! This recipe is from BBC Good Food, with the (inevitable) addition of some of Rav's chilli powder #SpiceGod.
Key thing you will take from this is it's green!!! Woooaaaahhh. Euuuurrrgggghh. Never eat anything green.....WRONG. This is lovely. It is healthy and a bit different. Make sure you are generous when you season it.
Wooaaah. This was really good. The avocados make it creamy and healthy whilst the salty bacon gives it a bit of a tang. Very nice. Very easy. This is so easy it hardly deserves a recipe. However, glorious gems like this are easily forgotten and this makes for a lovely little supper/lunch. Plus Ravi and Chloe were happy with me because it is vegetarian! OK so this isn't strictly mediterranean but I like to think it is (ish) because it's got olives, capers, tomatoes and chicken in it. Those are kind of the flavours I associate with the mediterranean. I'm probably wrong. But that's what this post is called anyway. So tough.
I also tried Dauphinoise Potatoes in my ramekins - worked very nicely. I have to confess I didn't use an onion as the RECIPE suggests (I didn't have one) but it is nicer with it so do try and use one. Also 4 potatoes makes about 3 ramekins; this is only a rough guide thought as they come in all sorts of shapes and sizes. This really is nice. I had a pretty ropey rowing session this morning so needed something to make me feel more human - this did it. It takes 30 mins to cook and about 10 mins to prepare. Smoked salmon is not cheap but when you get the 3 meats for £10 then it's a no-brainer. Super delish. Give it a go. When you are finished with the quiche, pop it in the fridge with some cling film. These were splendid. There was some doubt as to whether the Boursin should go in but I am pleased to say they worked well. Easy to do and taste beautiful. Well worth the effort. This made 4 ramekins plus enough stew to fill 1.5 jam jars. Give it a go!
OK so I have been trying to make a really good carbonara for some time; it has eluded me for a while but now I have it! Some people over complicate the whole thing unnecessarily. This really does work brilliantly and uses basically no ingredients.The trick, I have discovered, is to put the egg and cheese in at the correct time (see below for when this is).
Xiang and I have been saying for ages how we must cook something together but somehow it never quite happened! We finally got round to doing it on Saturday. Venus, Elena, Xiang and I all had a superb evening making this lot. Xiang brought some duck which, by chance, had a sauce that went splendidly with the spring rolls. It really was a fantastic evening.
I thought that we would be left very hungry but I was so wrong. We ate like kings! Venus also cooked a delicious cabbage thing which was basically cabbage fried in ginger and garlic with a little water. Very nice. For pudding we had some "custard buns" - they are like sweet bread filled with custard. You can get them from the Chinese store opposite the bus station (in Durham); this is where we got the pastry from. I was hungry and had no idea what to make. This is what happened. It was actually very nice. Vegetarian! Wooop! Easy.
This is one that can be done about 3 days in advance. If you are having a dinner party why not cut some toast into rounds using cookie cutters, pop a slab of goat's cheese on, grill it briefly and then lop the salad on top - this works very well as a smart little starter. Equally, you can have it for lunch. This was originally by Claire Macdonald. Her recipes tend to be pretty fab so worth a go. Regret to say I have flu at the moment. Just what you want in time for Christmas. Ahhhhhhhh. As a result, not much cooking is being done right now. This, however, is a lovely little drink if you have a sore throat (or feeling a bit run down).
Easy. Quick. Delicious. Nothing to complain about - this is one of my favourite things ever. Biggest mistake I ever made with this was leaving it in a fridge for 3 weeks....did not smell good at the end. However, if you don't do that, it's amazing!
Saw some Stilton and couldn't resist. I am pleased to announce this is vegetarian #CowRightsRepresent. Very easy. Very nice. The first time I did this I used a tin where the bottom comes out else the milk leaks into the oven; this resulted in a tart. Tasted lovely but not worth cleaning the inside of the oven out every time! If you use a proper dish it makes a lovely quiche! This is so healthy it is unreal. Literally nothing wrong with it. Tastes delicious too! Very easy to do. Don't be intimidated by butternut squash either - remember to peel it. This was inspired by one of Jamie Oliver's recipes - he puts a lot more stuff in it but this tasted great so I really wouldn't worry about it!
Not going to lie I found this hard to photografy (that is my new word - pronounced: fot-og-raf-i) but I can assure you it was fab. Nothing like a good apple tart on a cold December day. Furiously procrastinating right now. This tastes great and is actually dead simple to do. Not that bad for you either as it is mostly apple #oneofyourfiveaday #dubious
Give it a go! This was a fantastic evening. Elena and Venus cooked the turkey. Ronald and David made the best mashed potato ever, and Lawson Terrace (our house) made Apple Pie and Double-Decker Chocolate Bread and Butter Pudding (posting soon!).
It was just a superb night. Thanks to Venus for the picture below. This is another recipe that I have slightly adapted from the Crumbs Family Cookbook and it is fab! Apart from the sausage this is very nearly vegetarian so you could use something that isn't sausage if you want...?
This includes a Barking Baking Top Tip regarding carrots... succchhh fun! Superb on a cold night and this recipe makes enough for 5 meals. Just freeze what you have left over. I bought the meat for this from the butcher in the covered market in Durham. The gentleman very kindly cut the meat into thin slices for me and tenderised it (basically he hit it with a hammer thing!). This will last for a while in the fridge as long as you cover it.
Ideally serve with vegetables - perhaps some spinach? Equally nice as it is. This really is very easy - there is no frying - just lay the food in and then let it cook! |
