So Barking Baking is now 6 months old!! Awwww! We have Jamie Oliver to thank for this recipe. Great fun to make and taste fantastic. Very rich indeed and the chocolate mix can be made days in advance.
Have a super Christmas everyone. Regret to say I have flu at the moment. Just what you want in time for Christmas. Ahhhhhhhh. As a result, not much cooking is being done right now. This, however, is a lovely little drink if you have a sore throat (or feeling a bit run down).
Rock cakes are great. They are harder than your average cake. They have quite a lot of flour in them which is what makes them slightly more "rocky". If you want a really rocky look, don't roll the dough into balls as I have done below, instead grab a fork and kind of scrap them onto the baking tray.
Lots of cinnamon in these as I think that Christmas is all about a little bit of spice/being slightly exotic. Hope you enjoy them! Easy. Quick. Delicious. Nothing to complain about - this is one of my favourite things ever. Biggest mistake I ever made with this was leaving it in a fridge for 3 weeks....did not smell good at the end. However, if you don't do that, it's amazing!
This is a great cheeky pudding that takes no time at all. It is SUPER gloopy but absolutely delish. A sugar shot. Chuck it in the oven just as you are sitting down for some supper and it'll be done by the time you have finished eating.
OK. It's December. It's Christmas. We have to have mince pies. This is a really easy recipe - originally a Paul Hollywood but I have added a bit more sugar. Give it a go. Rob, Elena and I made these and they are fantastic! Check out the video below! It is Thanksgiving tomorrow and so this is part of my homage to that day. Doughnuts (or, if we are to be all American about this, Donuts) are one of my favourite things; this recipe is one of Paul Hollywood's - only he uses Strong White Bread Flour (which I did not have), nutmeg (also absent) and no Mars Bar (wooop we love Mars Bar).
The dough takes hours to make but the frying is super quick and quite fun! Make sure you have the extractor fan on - set the smoke alarm off about 5 times.... Blink and you miss it. That is how quick and easy these are. Taste great. Look funky. Helped me with some Equity and Trust law reading...
Not everything is well in the Barking Baking den. I am feeling pretty cold-y and have a cough (awwww). Also, two nights ago I tried to make a haddock chowder and it was horrible. However, I am very pleased to announce that this was exquisite!
I used the eggs I bought for basically nothing from the grocery on Loft side of North Road, Durham. Must mention that I did not have quite enough money to pay the huge £1.80 so the lady allowed me to just pay £1.71; I am going to pay them back when I next head in there - you can get 6 mars bars for a pound so that's going to be very soon! Everyone go there and buy your fruit and veg! Made some lemon cupcakes the other day. Problem was they take time. This really doesn't! Hungry? Do it! This is just fantastic. Chocolate cake is the best kind of cake. This is No. 5 in the Cambridge "Microwave Week"! Suuucccchh fun! Since we put chocolate in pre-cooking there are strands of chocolate all through the cake...! It's lovely. Give it a go. OK chaps. It is the mid-term chill-out week in Cambridge. I have a good friend in Caius College and she asked if we could provide some easy recipes for food in the microwave as they do not have any proper ovens. Outrageous.
So here you go. A nice cake in a cup to start with. The beauty of these is they take no time, are a shot of sweet gorgeousness and you need hardly any ingredients. This is a nice student-y take on a classic. Takes literally a minute - I like it if you don't quite cook the whole thing through so it goes super gloopy. It'll make ya happy!
I had no idea what these were before doing them. Turns out they are like mini cinnamon dough ball cookie things. Very good! From the "Nosh For Students" recipe book. Fab.

We have all been there. You are basically at the end of your jar of Nutella or chocolate spread. You are left desperately clawing for the last dregs of the wonder that lies within; because of this, your Nutella experience (yes, that is a thing) is no longer the delight that it should be.
However, fear not, Barking Baking has the solution: Nutella Milk Shots. Simply fill the jar up with milk and, checking there is no foil left on the rim, chuck it in the microwave until it is hot (no lid)! Give it a good shake (lid!) and then serve in your standard student shot glasses. We got 10 shots in total. #wildnight Wow. It is hard not to like rocky road. This one is amazing. Inspired by the Gü cookbook my housemates gave me. Divine and easy recipe. Give it a shot. I work in a sweet shop from time to time and a guy came in and told me to microwave some smarties as he said the chocolate in the middle melts, but the outer shell stays intact. So I tried it.
I have to say he was right in everything except that the colour of the shell goes a bit. Having said that, it was a properly gungy cake. A winner. Give it a shot. Toast a slice of the Olive, Basil and Sun Dried Tomato Bread then eat with goats cheese, tomato and lettuce. Easy as pie.
I am now back at Durham - the frozen north! Made this because I have not made a cake in ages; bit of a house warming thing too. I shall try and blog as much as I can but obviously I have work to do (arhhgg) and since this is my second year, it all actually counts now!
This is spectacular. It's Millionaire's Shortbread - but better! No denying it. Elena introduced it to me and it is glorious. Do it. Will change your life. This recipe is so easy and it tastes soooo good! A must! I reckon this will cost less than £1 to make all four mousses (use Tesco/Sainsbury's own chocolate). I used ramekins that were 3 inches across and 1 inch deep. These would be a good dinner party pud or date night thing as it's easy to make but still tastes fab. Maybe serve with raspberries or something if doing for date night #toptip. Love this. Perfect little pudding, such an easy recipe. It is worth noting that the cake top bit is exactly the same ingredients as the crumble on this Apple Crumble only without the egg... just saying!
OK, this was a mistake. I was trying to make fudge. But somehow it did not work as fudge. However, this is AMAZINGLY GOOD. You are supposed to use peanut butter but I did not do so because my mum is allergic to it so tried with ordinary butter. This may be why it did not work as it was meant to. Still, this is disgustingly good and would work as a pudding after a great meal. Best served chilled!
