So this is a new take on the classic barking baking cookies. It's lovely. I accidentally bought peanut M and Ms but actually it tastes fab anyway so well worth a go. Dig in. I think this is my new favourite one. It's super simple and delicious. Give it a go. Great for late night reading sessions!

There are so many great words in the title to this post. It's so easy to do and tastes fab. You absolutely must try it. Watch the video below.
This is actually a Nigella recipe and really fab. It's great if you need a quick hit of energy. Give it a go. Make sure you use the vanilla, it's what makes it so good. Ingredients
Method Crack the egg into a mug and whisk up. Pour this egg into a tin/bowl big enough for one piece of bread to lie flat in. Now add in the vanilla extract and stir about. Cut the bread into triangles and lay it flat in the tin. After a few minutes, when it has soaked up some of the egg, flip the bread and sprinkle sugar over it (about 1 pudding spoon). Whilst you are waiting, pop a frying pan on the heat with a large knob of butter. Gently melt it. After you have soaked both sides of the bread. Pop the bread in, sugar side up, and let it fry gently. After a few minutes the bread will begin to brown nicely; turn it over. You'll probably need a spatular and a fork/knife for this. Let it fry. It shouldn't take long. Whilst it is frying, sprinkle out some sugar on a plate. When the bread is done, take it out (carefully, it'll be hot) and turn it about in the sugar so it's lovely and coated. Do this for both and pop on a plate. Chuck a hunk of strawberry jam on top and then enjoy This is a lovely little meal. You don't have to put it with pasta; there are many different ways of serving it. The key thing to learn here is how to cook the salmon a healthy, delicious way. We don't add butter because we're feeling healthy. Check out the video. I was walking back from rowing this afternoon with Sophie and we got talking about food and cooking. I admitted I had a courgette left over from my escapades with a ratatouille. I didn't know what to do with it. Sophie suggested, among other things, a courgette frittata. It's superb. And I feel sooo healthy. OK so this is the easiest recipe in the world. We all love brownies but they are a bit of a faff to make. These are absolutely amazing. And they're just flour, chocolate spread and eggs. Do it. Kathy and James made one the other day and I thought it was fab so I had a go at my own version. This recipe is based on one from the BBC site but I didn't use 4 eggs as I couldn't see the point. Method Pop the milk in the microwave for two minutes (until it's steaming hot) and the break the chocolate in. Stir with a fork until it's melted and drink. Netflix here we come. Check out the baileys ice cream version... This evening we all sat down and had a lovely meal. Hamish is busy trying to get sorted for university and so I had quite a good day today. As some of you will know from our Snapchat feed, I was trying out some Giovanni Rana pasta tonight after their people reached out and suggested we give it a go. We also cooked a very easy tomato sauce with it. Check out the recipe and our verdict below!
This really is gorgeous. Ice cream. Healthy. Fruit. You don't really get anything better. No added sugar. Just fabulous. Do it. Ingredients
Method Peel the bananas and cut them up. Hull (ie cut the green bit off) the strawberries and cut them into halves. Pop it all on some baking paper on a plate then freeze (overnight works great). Then when you want to make the ice cream, blitz everything in a blender until it's super smooth. You will probably need to poke a fork in and scrape the fruit down towards the cutty bit of the blender a couple of times. Serve immediately or pop in a pot, cover and freeze - be aware this (obviously) makes it go hard and it will not be the soft gorgeous stuff you get when you eat it immediately. This is by far the best biscuit/cookie you can make in the microwave. It takes no time at all to make and, given you are not baking it, it really is pretty decent. I would definitely recommend giving it a go. One thing you should remember is that not all microwaves are created equal - by this I mean that they all have different power outputs so you'll have to experiment to see what timing works best for you!
This is exactly the same recipe as the Coralicious Chocolate Cake but you only cook it for 23 mins at 180. The recipe does 12 cupcakes with a little bit left over (good if you like to lick the bowl).
I had hunted around for a simple, great recipe for cookies for a while and then I came across this. It's fab. These are the cookies I made for the Durham Give A Rose scheme I run with Venus. I hope you enjoy making (and eating!) them. Apparently my grandmother gave this recipe to my mum but she couldn't really remember. All very strange. However, this was a lovely supper; suggest having lots of vegetables and rice with it.
Melt in the middle chocolate puds. Chocolate fondant. Volcano cake. Whatever you call them, I'm not going to lie, they're addictive. Sound impossible to do, but they're not. I've finally got a great recipe that works for this - I've tried 9 times! This is splendid. Our version of a molten cake. A couple of important things to note: 1. Use dark chocolate - the 30p stuff from Tesco is not ok. 2. Cut the baking paper into circles that fit into the base of the ramekin. 3. Be really careful peeling the baking paper off. This recipe is based on one by Dr Oetker. It's great. You'll never need to buy those Tesco ones again! Cora and I made a huge batch of these and sold them to raise some money for Cora's charity fundraiser! We raised over £60 in one afternoon - thank you to all who supported.

Fruit cake is underrated. Chocolate gets all the good press and fruit cake just doesn't. This recipe is brilliant; have been using it for years. It is moist without being heavy. Takes a bit of time but definitely worth it.
So Ravi and Chloe have both gone home for interviews (woooopp good luck!) and that leaves Rob, Cora and I still in Durham. Cora is a bit of a basketball queen so 'twas just Rob and I here last night. This is what we made. It is based on a recipe by Paul Hollywood only we used a different amount of flour, no chocolate chips and no semolina.... It's really good.
This was a lovely little supper. Very healthy. In Tesco you get 2 fillets in a pack and there always seems to be a "2 pack for £7" or "3 for £10" on all meats. Suggest you get on it.
Love a good pancake. This is super easy and works like a dream. Check out the video for a full walk through. Makes two. This is runnier than the other pancake recipe and so you can make more crepe-like pancakes. Not really sure what the difference between crepes and pancakes are; think crepes are basically a bit thinner. This is really easy and perfect for the end of term when you have no proper food left #student. Enjoy. Check this out. I seem to live off a constant supply of peanut butter and jam on toast, so I thought why not in a cake? Works fab. Be generous with the peanut butter. Here the jam looks like a heart so I guess it could be a post-valentine-I-still-love-you cake? So easy you'd be mad not to try it.
So I tried this when Elena, Venus and Xiang came over for supper the other day. Xiang brought a rather fab rice thing which I have not been able to get the recipe for (yet!) and Elena and Venus did a stir fry! I have no idea what this is supposed to be like but it came out nicely; it is quite moist inside and a little bit like bread and butter pudding or brownie. Well worth a try.
